Breakfast was my spinach/asparagus fritatta, lunch was my boring salad with avocado, cottage cheese and garbanzo beans, and dinner was a late visit to Yummy Mongolian BBQ. No more than 400 calories, even with 1/2 cup of spinach soba noodles.

Must Remain Vigilant!
Breakfast was a sugar free vanilla latte, thanks to my laxity in wrapping up a slice of quiche to go.
Lunch was better, but still store-bought; a tuna salad from Subway. I then treated myself to a salted caramel. I feel the 8g carbs were worth it.
Dinner was tofu and asparagus with some Yumm! Sauce. Have you heard of Yumm! sauce? Oh my word...
A little goes a long way and 1 Tbsp has 1g carbs.

I Say Fritatta
This'll be my breakfast for the next 6 work days. Baked omelet/fritatta thingie consisting of 6 eggs, 8oz crumbled tofu, various cheeses, spinach and asparagus. Top with fresh salsa and you're jammin.
Lunch today was the usual boring salad plus garbanzo beans, avocado and cottage cheese, but dinner was AMAZING!
Two cold water lobster tails, broiled with garlic butter, plus "fried" Brussels sprouts and cauliflower mash. Pinkies were out!

Boring!
Boring diet day. Bran muffin for breakfast and two nearly identical salads for lunch and dinner. The only difference is the lunch salad had 1/2 cup of cottage cheese on it.
1 Romain heart, some kale, some spinach, 1/2 an avocado, grape tomatoes, 1/2 a tablespoon of pine nuts and 1/4 cup of chick peas, plus Newman's Own Lite Balsamic dressing.
1 small apple with 2 tablespoons of peanut butter for an after-dinner snack.
What I really wanted was natcharoni and cheese. It's something I made up in my head consisting of nachos and macaroni and cheese.

A Reasonable Facsimile
In an effort to avoid Taco Bell on Sundays (my weak of the week), I put together a spicy black bean burger inspired by the Spicy Anasazi burger at Burgerville (another one of my favorite treats). It doesn't look like much, thanks to the weird multi-grain "sandwich thins" bread. But the spicy burger + pepper jack cheese + chipotle mayonnaise = a powerful punch in the flavor face. 310 calories; 28g carbs
I pre-prepped most of a salad for dinner, and am spending the rest of my time before work baking those bran muffins I promised. I'll let you know how they turn out.

The Most Important Meal of the Day
Saturday morning breakfast of a 2-egg + 2-egg-white omelet stuffed with sauteed kale, red pepper flakes, and an ounce of goat cheese. Sided with 4 sliced strawberries marinated in balsamic vinegar. If the Self Nutrition Data website is to be believed, this little breakfast only cost me 337 calories. Can you imagine if this were a restaurant omelet with hash browns, bacon and coffee?
Time to walk to the dog park and try to work up an appetite for lunch...

Mmm...braaaaans...
Pazzo Bakery downtown has the best bran muffins evar. Even if they do have ni-nis (raisins) in them. I could eat just this bran muffin and then dinner and be solid. But Chris is the blood sugar police, I guess and FORCED me to eat lunch today, which was a Schlubway salad with tuna salad on top. I looked up every ingredient on Spark People (thanks Cristi!) and it comes to 390 calories.
I did have an unnecessary iced grande sugar-free vanilla latte this afternoon because Chris got stuck on a call at the last minute and I had to do something to kill time before we zipped to the shelter to see Alice, my hopefully-future dog. Lemme see what that latte came to...Only 120 calories, but milk sugar (lactose) and protein, so it had 18g of carbs (yikes) but 12g protein (win).
I ended the evening at Yummy Mongolian BBQ with Chris. I did consume almost a cup of spinach soba noodles, but a mass amount of shrimp and veggies like cabbage, spinach, mushrooms, red bell peppers, broccoli and onions. Yummy, indeed! Even with the noodles, the calories only came to about 325 calories, thanks to shrimp being low in everything but protein.
Soooo...The bran muffin was maybe the worst thing I consumed based on carbs alone, but I found this amazing-looking bran muffin recipe that I am going to try this weekend. Only 7g carbs!
The non-low-carb bran muffin prolly cost me about 325 calories and 40-50 carbs if my lazy internet search is to be believed. Pazzo doesn't publish their nutrition information, so I did my best to compare out there. All told, my calorie count today was approximately 1160 calories and approximately 40,681 carbs.

A Little Story to Set the Tone...
It was a rainy Portland Sunday night a couple of weeks ago when I decided that I wanted pizza for dinner. I knew this was a cardinal sin, but my will is incredibly weak on Sundays. I pulled up to Pizza Hut on North Lombard, turned off the ignition, dropped the keys in my purse and hopped out of the car and locked it...with my purse and keys still sitting in the passenger seat.
Fuck.
It took me three seconds to decide against calling Chris even though he has AAA. Instead, I went inside the Pizza Hut and asked for the yellow pages. My wallet and insurance card were in the car as well, and I do not have my insurance company's number programmed into my phone. (Miracle of miracles, my phone was in my coat pocket.) Admitting I was locked outside my car was no big deal. Who cares? But there was no way I was letting Chris find out I was parked outside a friggin Pizza Hut! Are you crazy?
While I was on hold with the insurance company, I wandered over to the fire station to see if maybe they had a lock jimmy. The guys there were friendly but said they couldn't pop my lock unless there was an emergency. (They asked if the car was running, if there was a child inside and if it was on fire. Ha.)
What they did do is offer to let me wait inside the station rather than stand around in the rain or in the Pizza Hut.
I got a hold of the insurance company and they gave me the name of a locksmith that I called to come out to my car.
While I was waiting, one of the firemen made me a bowl of Baskin & Robbins chocolate chip ice cream with chocolate sauce on top. I would have felt rude for turning that down! One of the other guys made fun of me for wanting to eat at Pizza Hut in the first place. "Wouldn't you rather have Papa Murphy's instead?" He was totally right.
Locksmith dude finally got there (he told me 20 minutes, it took 50). He spent 14 seconds popping my lock and another 3 minutes writing up a receipt for 165 goddamn dollars. He said the price depends on the vehicle and, in my case, day and time (Guess he thinks popping locks on a Sunday night is a pain in the ass). I have a feeling he jacked up the price because I said "yes" when he asked me if I had insurance. State Farm is going to reimburse me, but sweet holy Moses, $165? That would've been one expensive pizza...
After the check book rape was over, I hopped in my car and put Pizza Hut in the rear view mirror. This was Diet Karma. It served me right to shell out $165 on a rainy Portland Sunday night as punishment for my weakness. It was a testament to the severity of my lack of willpower.
I hope this blog will help keep me honest in my goal to eat healthfully, and if nothing else, I won't be embarrassed to call Chris when I lock myself out of my car in front of the All You Can Eat 100% Healthy Diet-Safe Salad Bar and Iced Tea Stand.
